You can start them any day you wish, it doesn't have to be a Sunday.
The only difference, as listed by the FDA, is that if you start them the first day of your period, then you will be immediately protected from pregnancy, because they will prevent ovulation.
However, if you start them the third day of your cycle, or later, you will need to use a form of backup protection for the first 7 days, because it takes that long for them to reach their full level of efficacy in your body.
The typical side effects are listed as possibly including nausea, dizziness, headache, irritability, breakthrough bleeding and PMS-like symptoms.
