In theory, I wouldn't think it would create any problems, but I'd suggest talking to your pharmacist to be certain. They often have more information on some obscure interactions that this site doesn't have.
I am just basing my guess off the fact that there are no warnings between using it and eating products that use olive oil. The only issue I can really see with out information is if they pill was in it long enough to start dissolving, then you may not get the full dosage.
