Are you taking Levothyroxine after your thyroid was removed, or just supplementing with it due to an under-active thyroid? If you are taking Levothyroxine after your thyroid was removed, then from my perspective you have absolutely nothing to worry about if you drink as well. The drug they give you is supposedly identical to the one your body manufactures in the thyroid and therefore has no interactions with alcohol.
However, both alcohol and Levothyroxine are broken down in your liver, so after a night of getting drunk or drinking a little too much, you may experience a lot more of the side effects from Levothyroxine, such as diarrhea and palpitations.
With all that said, I'd say alcohol is fine to drink, but I think you would have to go easy on it when you do.
