I understand why you're asking, many people are never really told why this is necessary.
In the case of some heart conditions, a possible poke from one of the dentists implements creates the risk of your developing an infection which could grow into something bigger that sets into one or more heart valves.
So really, it's much safer and easier to take the antibiotics before going, rather than end up having to have heart surgery to replace infected valves.
