Grapefruit juice slows the breakdown of several drugs; however, information that I was able to gather on this topic puts phenytoin on a list of medications that have no significant interaction with grapefruit. Drugs in this section have all been studied with grapefruit, and found to have either a minimal/negligible interaction:

That said, grapefruit will have little (if any) effect on the metabolism of phenytoin.
